Einkorn Bread Recipe


Einkorn Bread Recipe:

Ingredients:
4 cups Einkorn Flour*
1 cup Water
1.5 tsp Yeast
1 tbsp Salt
Instructions:
Add the 4 cups of Einkorn flour to a large mixing bowl. Add in the 1 tbsp of salt and mix it into the flour thoroughly. This is an important step to mix the salt in, because if the yeast directly touches the salt, it can kill the yeast and your bread won't rise.
Add the 1.5 tsp of yeast to the bowl with the other dry ingredients and mix it in. Measure 1 cup of room-temperature (or colder) water. Do not use hot water, since if the water is too hot it can kill the yeast. Distilled water works great for bread-making.
Pour in the 1 cup of water into the bowl with the flour, salt, and yeast. Mix it in thoroughly until it all combines to form a dough. If the dough is not coming together, add a little more water, about a tablespoon at a time until it forms a dough. If you end up adding too much water and the dough is too sticky, add more flour until it is workable again.
Knead the dough by hand (it will work to knead it either in the bowl if it's big enough or on a floured countertop) for about 5 to 7 minutes until it feels well combined. Form the dough into a ball shape and set it in the mixing bowl. Cover the bowl with a cloth and leave it to ferment for a couple hours at least. You can also let it ferment longer if you wish, but it will have risen enough by 2 to 3 hours of fermentation time.
Once your dough has finished rising, pre-heat your oven to 450°F. Roll out the dough onto a lightly floured surface. To get it shaped like the loaf in the picture, flatten the dough to a rectangular shape. Take the sides of the dough and fold them inwards towards the center, then flatten this out into a rectangle again. Repeat folding the sides inward toward the center and your dough should resemble the shape of the loaf.
Put the dough in a baking dish (or a bread tin if you have one). Make sure to flour the bottom so that the bottom of your bread won't burn. Cover the dough with aluminum foil. Let it bake at 450°F for 20 minutes, then remove the aluminum foil cover and lower the oven temperature to 400°F. Then put the loaf back in the oven at 400°F for about 16 minutes, until a toothpick inserted comes out clean. And there you have it, your very own homemade healthy and delicious loaf of einkorn bread!
*This recipe is based on all-purpose einkorn flour. If you use whole wheat einkorn, you may need to add more water.
